King Crab Legs for Valentines Day

 

i aint no fancy
chef....but i do like to cook, and my wife and i spend entirely too much time
watching  the food channel. especially Good Eats with alton brown. and from there comes my favorite
way to reheat crab legs...my favorite.

 

Buy a 2#
package, from me of course, take it our of the bag and submerse the legs in
cold water to thaw.....maybe  15 minutes or so. wrap two 1 pound packages
in wet paper towels and then wrap each in cling wrap (saran, or whatever) 
cook each package for 2 minutes on high in the MICROWAVE. done, finished, no
messy steaming or boiling.. It works.

do not unwrap
until you are ready to eat. They will stay warm for 15 minutes.

 

Ghee is a fancy
name for melted butter. put two sticks of butter in a sauce pan, melt over medium
heat, then bring to a boil. Remove from heat and strain and return butter to
sauce pan and warm again. Beautiful color and taste for you crab legs.

orchestra conductor had been having problems with the bassists; they were the
least professional of his musicians.  It was the last performance of the
season, Beethoven's 9th Symphony, which required extra effort from the bassists
at the end.  Earlier that evening, he had found them celebrating a
birthday by passing around a bottle.

 

Then, as he
was about to cue the bassists, he knocked over his music stand.  The sheet
music scattered.

 

So he stood
in front of his orchestra, his worst fear realized:

Broiled Lobster Tail

Lobster Tail
with Paprika Butter

 

Lobster Tails, about ¾ lb per person,
if main course

Butter – ¼ stick per person

Garlic, crushed 1/32 of a teaspoon!

Paprika

 

Thaw lobster tails overnight in the refrigerator, or, if
necessary, under cool running water. By the way, for best flavor and texture,
thawing slowly is the way to go (overnight).

 

Preheat broiler or grill to medium/high. In a small bowl,
melt 2 teaspoons butter, and stir in a tiny bit of garlic, and a dash of
paprika. In another small bowl, melt the rest of the butter, and stir in more
garlic and paprika [this is for dipping the lobster, but the flavors will marry
if you do this in advance].

 

Split
tails completely in two for easiest cooking and eating. Or cut the back down to
the last segment, with kitchen shears, and pull up the meat. Either way is
fine.

 

Brush exposed lobster meat with the butter mix, then place
on oiled, pre-heated grill. Start with meat side down, cook for about 2
minutes, and then rotate 90 degrees. This makes a nice ‘hatch’ mark on the
lobster. Looks great. After another 2 minutes, flip them over so that the shell
side is down. Continue to cook for an additional 3-5 minutes. Don’t be afraid
to cut into one to see if it is cooked through [clear looking meat when raw,
solid looking when cooked].

 

Enjoy
with a green salad, grilled potatoes, and a nice cold bottle of Sauvignon
Blanc.
